Products Description

Distilled Glycerin Monostearate (DMG), also known as Distilled Monoglyceride, is a highly purified non-ionic emulsifier derived from natural sources like vegetable oils (palm, sunflower, soybean) or animal fats. It is produced through the esterification of glycerin with stearic acid, followed by molecular distillation to concentrate the monoglyceride content to over 90% purity. This purification process removes impurities such as diglycerides, triglycerides, and free glycerol, enhancing its emulsifying efficiency compared to non-distilled monoglycerides.

Distilled Glycerin Monostearate, DMG is a mixture of glyceryl monostearate (C₂₁H₄₂O₄) and glyceryl monopalmitate, with a hydrophilic glycerol head and a lipophilic fatty acid tail. This amphipathic structure allows it to reduce surface tension between oil and water phases, making it an excellent stabilizer for emulsions. It typically appears as white, waxy flakes, beads, or powder, with a melting point ranging from 60°C to 70°C. Distilled Glycerin Monostearate, DMG is insoluble in water but can disperse in hot water with stirring, and it is soluble in hot organic solvents like ethanol, benzene, and mineral oils. Its HLB (Hydrophilic-Lipophilic Balance) value is between 3.9 and 5.3, classifying it as a water-in-oil (W/O) emulsifier, though it also functions effectively as an oil-in-water (O/W) emulsifier in many formulations.

Key Applications of Distilled Glycerin Monostearate in Food Industry

Bakery Products

Distilled Glycerin Monostearate, DMG is a staple in the bakery industry for improving product quality and extending shelf life. In bread production, it enhances dough elasticity and strength, leading to a more uniform crumb structure, increased volume, and a softer texture. By forming complexes with amylose in starch, it inhibits starch retrogradation, preventing bread from staling and drying out quickly. This anti-aging effect also benefits cakes, muffins, and pastries, keeping them fresh and tender for longer periods. When combined with other emulsifiers like sucrose esters, it acts as a foaming agent, creating a fine, stable air bubble structure in cake batters for lighter, fluffier products. In cookies and crackers, it disperses fats evenly, reducing oil migration and improving crispness, while also aiding in mold release.

Dairy and Frozen Desserts

In ice cream and frozen desserts, Distilled Glycerin Monostearate, DMG plays a critical role in creating a smooth, creamy texture. It stabilizes air bubbles incorporated during mixing, maintaining product volume and preventing the formation of large ice crystals that cause a coarse mouthfeel. This results in better shape retention during storage and a more palatable eating experience. In non-dairy creamers, it improves emulsification, preventing oil-water separation and ensuring a consistent, creamy texture when mixed with hot beverages. For dairy products like cheese, milk powder, and condensed milk, it enhances solubility, prevents caking and sedimentation, and improves overall stability.

Confectionery and Beverages

In candies and chocolates, Distilled Glycerin Monostearate, DMG controls fat separation, reducing the likelihood of blooming (the white, powdery appearance caused by fat migration) and maintaining a smooth, glossy surface. It also improves the texture of caramels and toffees, preventing stickiness and enhancing chewiness. In protein-based beverages like soy milk, coconut milk, and almond milk, Distilled Glycerin Monostearate, DMG enhances dispersion and stability, preventing the settling of solids and creating a smooth, homogeneous drink. It acts as an effective defoamer in soybean processing, reducing foam formation during extraction and improving production efficiency.

Distilled Glycerin Monostearate Applications in Other Industries

Cosmetics and Personal Care

Distilled Glycerin Monostearate, DMG is widely used in cosmetics and personal care products as an emulsifier, stabilizer, and emollient. It helps blend oil and water-based ingredients in creams, lotions, and ointments, maintaining product consistency and preventing separation. Its mild, non-irritating properties make it suitable for sensitive skin, and it can improve the texture and spreadability of products like makeup bases, foundations, and hair conditioners. Distilled Glycerin Monostearate, DMG also functions as a defoaming agent in skin cleansing products, reducing foam while maintaining cleansing efficiency.

Pharmaceuticals

In the pharmaceutical industry, Distilled Glycerin Monostearate, DMG serves as an excipient in oral and topical formulations. It acts as an emulsifier in ointments and creams, stabilizing the drug's active ingredients and improving skin penetration. Distilled Glycerin Monostearate, DMG can also enhance the bioavailability of fat-soluble drugs by improving their solubility and dispersion in aqueous environments. In some cases, it is used in sustained-release formulations to control the rate of drug release in the body, ensuring consistent therapeutic effects over time.

Plastics and Polymers

Distilled Glycerin Monostearate, DMG is a valuable additive in plastic processing, particularly for EPE (Expandable Polyethylene) and PVC (Polyvinyl Chloride) products. It acts as a non-toxic plasticizer, improving the softness and plasticity of plastics, and as an anti-aging agent, extending the lifespan of products by reducing oxidative degradation. In EPE foam production, it functions as a foaming agent, helping to create a uniform cell structure and enhancing the foam's mechanical properties. Distilled Glycerin Monostearate, DMG also serves as an anti-static agent, reducing static electricity buildup in plastic products, and as a mold release agent, preventing plastics from sticking to molds during manufacturing.
